It seems to me that Jesus expects us to fast as He said a couple of times " and when you fast….", so why isn’t it’s importance stressed more in Church these days?

Fasting is a way of giving "something" (doesn’t have to be food) up that you spend time doing, so that you may use that time to worship, pray about a problem or study Gods word, etc. You will miss the true blessings of fasting though if you only go through the motions and do not use your extra time for God.

From what I understand of fasting it’s to devote some extra time in communication with God, either through prayer, reading the word, worship etc, I don’t believe it necesarily has to be food we give up to fast. I’ve not given up food but I might get up an hour earlier than usual and spend that time in prayer instead.

The reason not all Christians fast is because fasting isn’t comfortable. It doesn’t appeal to our hedonistic side.
